You could share your code (in a GitHub account for instance), or pictures and diagrams about your application and what it does. The projects can be very diverse so there is no one single right way to document your project. As long as we can understand what you are doing and be sure it is your own work,then you should be OK.
The most important part of the submission is the video however. You can see many examples of those here: http://roboticshackathon.com/about/projects-2012/
